What happens to this cable when the missile is launched? Does it go with the missile or stay connected to the launch rail?

From memory, it gets cut at launch.

As Motty stated, it is retained by the launcher. There are three shear screws that hold the umbilical (cable) to the missile, when the missile is fired, the screws shear and an umbilical hook (called the snatch away) retains the umbilical and pulls it inside the nose cone.

IIRC the missiles are light ghost grey FS 36375.
